Made with pasteurised milk but it is a seasonal product as ewes only produce milk between November and July. The cheese is aged for at least 120 days in the Lons cheese dairy at the foot of the Pyrenees mountains. Ageing helps the Ossau-Iraty PDO to develop its fruity aromas and mildness.
